Meatball Sandwiches (Zombie Eyeballs)

Having a spooky meal or Halloween themed dinner at this time of year can be so fun, especially with young kids. It's also a busy time of year though, and sometimes my energy or creative juices can be found lacking. Here is a simple meal you can put together for your family that has some Halloween fun, but also is super easy and quick.

Meatball Sandwiches

You will need:

14 oz. can Jellied Cranberry Sauce
12 oz. bottle Chili Sauce (You can find it by the ketchup, and it kind of looks like ketchup).
2 lb bag frozen, pre-cooked Meatballs (make sure they say something like Homestyle or Original, do not get Italian style meatballs)
French Steak Rolls


Mix the cranberry sauce and chili sauce together in a large saucepan. Cook over medium-low heat, stirring until smooth.


Add meatballs, make sure they all get covered with the sauce. 


Cover with a lid and cook for 20-25 minutes, stirring about every 5 minutes.
 

 When they are cooked through, put them on your steak rolls for some yummy sandwiches.


Add some veggies, chips, and dip and you have a complete meal.


Tell your kids you are serving them "zombie eyeball" sandwiches, put everything on a fun Halloween plate, add pumpkin spice eggnog, and you have turned a regular family meal into a fun, spooky Halloween dinner!
Just in case you're wondering, that is my daughter's pink pencil case back there, filled with water and a plastic octopus inside. Just keeping it real. What random things are on your kitchen table? :)

Everything including the pumpkin spice eggnog was from Walmart. Except for the plates, those were a Hobby Lobby find.

As my six-year-old would say, easy peasy, lemon squeezy. :)
